PENETAPAN KADAR THIAMIN HCL PADA AIR CUCIAN BERAS (ORYZA SATIVA) DENGAN VARIASI SUHU SECARA SPEKTOFOTOMETRI UV-VIS
XMLThiamin HCl is a very volatile vitamin. Its stability is influenced by pH, temperature and processing. The washing process carried out on rice before cooking allows Thiamin HCl to dissolve in water. Thiamin HCl is soluble in water and alcohol. Can be damaged by heat, especially in the presence of alkalis.Objective:to determine whether there is a difference in levels of Thiamin HCl in rice washing water with variations in washing water temperatures of 15°C, 28°C, 37°C and 50°C.Result:The average level of vitamin B1 in rice washingwater with a temperature of 15°C is 0.0444gr/25gr, at 28°C is 0.0261gr/25gr, at 37°C is, 0.0426gr/25gr, and at a temperature of 50°C is 0.0347gr/25grConclusion:There is a significant difference in vitamin B1 levels between rice washing water with water temperature variations of 15 ° C, 28 ° C, 37 ° C, and 50 ° C which are influenced by the temperature of the washing water.
