PENETAPAN KADAR AKRILAMIDA PADA KOPI BUBUK YANG BEREDAR DI PASARAN DI WILAYAH MOJOKERTO DENGAN MENGGUNAKAN SPEKTROFOTOMETRI UV-VIS
XMLAcrylamide is a chemical compound found in roasted coffee at temperatures above 120 ̊C, potentially causing cancer in humans. The purpose of this study was to compare the acrylamide content in several brands of ground coffee on the market in the Mojokerto region using UV-Vis spectrophotometry. This method is proven valid with linearity y = 0.3051 + 0.1251 x, correlation coefficient (r) = 0.9996, detection limit 0,05 μg / mL and quantitation limit 0,15 μg / mL. Acrylamide levels in coffee samples of brand A, brand B and brand C respectively 7.4 ± 0.00006 μg / g, coffee powder brand B contains acrylamide 5.2 ± 0,0004 μg / g, and coffee powder brand C containing acrylamide 2.6 ± 0.00001 μg / g. The three samples of ground coffee showed that the acrylamide levels of each sample ranged from 13 to 37 μg / g. The level obtained is still within the safe limit of consumption of acrylamide released by WHO.
