Acrylamide is formed when foods that are high in starch,such as potatoes and cassava, undergo a process of high temperatures heating,including roasting,frying,and baking.This compound is a chemical compond that can cause cancer and function to be neurotoxic.This study aims to identify the levels of acrylamide contained in factory packaging cassava chips and home industry cassava chips ( IRT ).Samples in the study of factory packaged cassava chips (A) and IRT packaged cassava chips (B) were mashed and weighed and tested 3 times for replication at each concentration.Make acrylamide curves 0,5 ppm, 1 ppm, 2 ppm, 3 ppm, 3,5 ppm, 4 ppm.With a wavelength of 207 nm the equation obtained is y = 0,1251 x + 0,3051 with a value of r = 0,9996.Based on the research that has been done, it can be concluded that the factory packaged cassava chips ( A ) and IRT cassava chips ( B )contain acrylamide.The sample of factory packaged cassava chips ( A ) obtained results ( average = 0,04 % b/b, SD = 0,01 ), The sample of IRT chips ( B ) obtained results ( average = 0,05 % b/b, SD = 0,01 ). The sample shows no significant difference between the factory packaged cassava chips ( A ) and the IRT cassava chips ( B ).
